Old-Fashioned Molasses Cookies

These cookies have been passed down for generations in my family. Moist and delectable from my family to yours. Just the right sweetness and spice (yes, there is some sugar in this recipe, but a good homemade cookie is a respectable treat). If your sweet tooth is calling, try a simple glaze for a pretty topping. Molasses is a mineral-dense fuel source, especially abundant in iron and calcium (as well as a keen source of copper, manganese, potassium and magnesium). It metabolizes cleanly in the body without rocking the blood sugar. Plus, it's distinctive taste cannot be substituted, especially when paired with the right blend of spices. Ingredients
1 cups organic sugar 6 oz. dark molasses 6 oz. fresh water 1 cups raisins 3 tablespoons organic margarine 3-1/2 cups flour 1 teaspoon baking soda 1 teaspoon fine ground sea salt 1 teaspoon ground cinnamon 1 teaspoon ground clove
Procedure
Preheat the oven to 350˚F
Place sugar, molasses, water and raisins in a saucepan. Bring to a simmer,remove from heat, then add margarine. Let cool to near room temperature (this is important because if is too hot when mixed with the flour, the gluten of the flour will cause the dough to become too elastic). Sift flour, baking soda, salt, cinnamon and cloves. Add wet ingredients to dry ingredients and mix thoroughly. Roll into balls (about 2 tablespoons each) Bake 15 minutes. If glazing the cookies is up your alley (wait until cookies have cooled to room temperature): Make a paste of organic powdered sugar and water (start with powdered sugar in a bowl and add water slowly, mixing as you go until you have achieved a thick paste). Dip the tops of the cookies in the glaze. Place on a cooling rack until completely dry before storing.
